Peppered old-fashioned

Serves: 8-12
500ml bourbon
25 dashes angostura bitters
10 strips orange peel (pared with a peeler), plus extra to garnish
20 cocktail cherries, plus extra to garnish
1-2 tsp coarsely ground black pepper, plus extra to garnish
1. Mix all the ingredients with 100ml water in a large carafe, adding the pepper last, to taste. Using a wooden spoon or muddler, lightly crush the orange peel and cocktail cherries in the carafe. Set aside for at least 10 minutes before serving.
2. To serve, pour over a tumbler full of ice and garnish with a cherry, orange strip and a grind of pepper.
