Persian lamb skewers

610g pack 24 essential Waitrose British Lamb Meatballs
350g jar Waitrose Persian Inspired Harissa & Sour Cherry Cooking Sauce
2 x 250g packs Waitrose Love Life Quinoa, Chickpeas, Bulgur Wheat & Rice
28g pack coriander, roughly chopped
2 preserved lemons, drained, skin only, finely diced
2 salad onions, finely sliced


1. Thread the lamb onto 4 skewers then cook under a preheated grill for 10-12 minutes, turning once or twice, until thoroughly cooked.

2. Warm the Persian inspired sauce according to pack instructions.

3. Cook the quinoa mixture according to pack instructions. Mix with the coriander, lemon and onion. Serve the lamb on a bed of quinoa with the sauce spooned over.
