Pesto-crumbed cod with leek mash


75g fresh breadcrumbs
1½ tbsp green pesto
2 essential Waitrose Cod Fillets
1 tbsp olive oil
1 essential Waitrose Leek, washed and sliced
400g pack essential Waitrose Mashed Potato


1. Preheat the oven to 200ºC, gas mark 6. Mix together the breadcrumbs, pesto and 1 tbsp water and press onto the cod fillets, place in a small roasting tin and bake for 15–20 minutes, depending on the thickness of the fish fillets.

2. Meanwhile, heat the oil in a frying pan and fry the leeks for 4–5 minutes until soft. Cook the potato according to the pack instructions and mix into the leeks.

3. Serve the cod with the leek mash and your favourite steamed greens.
