Pomegranate, grain & herb salad

250g pack Waitrose Love Life Quick Cook Freekeh & Quinoa
1 red chilli, deseeded and finely chopped
1 tsp ground allspice
Finely grated zest and juice of 1 lemon
25g pack mint, leaves only
28g pack coriander, leaves only
25g pack flat leaf parsley, leaves only
125g pack pomegranate seeds
200g feta, crumbled
1. Bring a large pan of water to boil over a high heat. Add the grains and cook for 10 minutes, until tender.
2. Drain through a sieve and rinse under cold running water.
3. Put into a large bowl and add the chilli, allspice and lemon juice, then season.
4. Roughly chop the herbs and stir through the cooled grains, scatter with the pomegranate seeds, feta and lemon zest. Delicious served with spiced lamb cutlets and harissa baked shallots – search waitrose.com for the recipes.
