Pork steaks with Bloody Mary salsa

Serves: 4
250g pack cherry tomatoes
1 stick celery, plus a few leaves
4 cornichons
1-2 tsp Worcestershire sauce
3-4 tsp Tabasco
1 tbsp olive oil
4 British pork loin steaks, about 150g each
1 tbsp fresh thyme leaves
1 tsp paprika
1 Finely chop the tomatoes, celery and cornichons and put in a bowl. Add 1-2 tsp each Worcestershire sauce and Tabasco, depending on how hot you like it. Add the oil and some seasoning and stir well. Set aside while you cook the steaks.
2 Preheat the grill to medium. Sprinkle the steaks on both sides with 2 tsp Tabasco, the thyme, paprika and seasoning. Grill for 10 minutes on each side until browned and cooked through and any juices run clear. Serve with the salsa.
