    Pork with fennel, grape & apple salad

    Ingredients

    300g pack Waitrose 4 Pork Minute Steaks
    1 tsp smoked paprika
    1 tbsp lemon juice, plus a squeeze
    25g pecans
    1 tbsp olive oil
    1 tsp fennel seeds, lightly crushed (optional)
    1 pink or red-skinned apple, cored and thinly sliced
    100g red seedless grapes, halved
    300g pack fennel, shaved or finely sliced, fronds reserved

    Method

    1. Rub the pork with the paprika, seasoning and 1 tsp lemon juice, and set aside for a few minutes. Heat a dry non-stick frying pan over a medium heat and add the pecans. Toast for about 5 minutes. Set aside to cool, then roughly chop.

    2. In a large bowl, whisk together 2 tsp lemon juice, 2 tsp oil, the fennel seeds (if using) and some seasoning to make a dressing. Add the apple, grapes, fennel and pecans, and toss to coat.

    3. Using the same non-stick frying pan, heat 1 tsp oil over a high heat. Sear the pork for 2½-3 minutes on each side until cooked through with no pink meat. Rest on a plate, covered, for 2 minutes, then serve with the salad. Spoon any resting juices over the meat and then scatter with the fennel.
