Pork with maple butternut squash

350g pack Waitrose Diced Butternut & Sweet Potato
2 tsp wholegrain mustard
1 tbsp olive oil
1 tbsp maple syrup
1 tbsp thyme, chopped
120g fine green beans, trimmed and halved
2 pork loin steaks, trimmed


1. Preheat the oven to 200°C, gas mark 6.

2. Place the diced butternut and sweet potato on a baking tray, and toss in the mustard, oil, maple syrup and thyme. Roast for 15 minutes. Add the beans and roast for a further 15-20 minutes until tender.

3. Meanwhile, place the pork steaks under a preheated grill for 15 minutes, turning occasionally, or until cooked throughout. Serve with the roasted vegetables.
