Pork koftas with coconut rice

Serves: 4
500g pack essential Waitrose British Pork Mince
1 bunch essential Waitrose Salad Onions, chopped
2 tsp medium Madras curry powder
160ml can essential Waitrose Coconut Cream
300g essential Waitrose Basmati Rice
1 tbsp vegetable oil
1 tsp cumin seeds
28g pack fresh coriander, chopped
1. Mix the pork, 1/3 salad onions, curry powder and 2 tbsp coconut cream, then season. Divide into 16 balls and thread onto 4 skewers (pre-soakwooden skewers in water to avoid singeing). Place under a preheated grill for 15 minutes. Turn occasionally until cooked throughout.
2. Meanwhile, boil the rice for 10-12 minutes, then drain. Heat the oil in a frying pan and fry the remaining saladonions and cumin for 1 minute, add the remaining coconut cream and then the rice and cook for 1-2 minutes. Stir through the coriander, season and serve with the koftas.
