Potato salad

Serves: 4


1 tbsp cider vinegar

3 tbsp olive oil

1 tsp wholegrain mustard

1 crushed garlic clove

Pinch of sugar

750g new potatoes



Sliced red onion

Roughly chopped parsley


  1. Whisk together 1 tbsp cider vinegar, 3 tbsp olive oil, 1 tsp wholegrain mustard, 1 crushed garlic clove and a pinch of sugar.
  2. Cook 750g new potatoes; halve any larger potatoes and dress while still warm with the vinaigrette. Toss with some capers, chopped gherkins and sliced red onion.
  3. Fold in some roughly chopped parsley, season and serve warm or cold.
