    Pots au Chocolat

Abandon all thoughts of instant gratification. These intensely chocolatey treats need time to set, but they are proof that good things come to those who wait

    • Preparation time: 20 minutes, plus 10 minutes cooling and 12 hours chilling
    • Total time: 20 minutes, plus 10 minutes cooling and 12 hours chilling 20 minutes

    Serves: 6

    Ingredients

    • 200g plain chocolate
    • 50g salted butter
    • 100ml whole milk
    • 100ml double cream
    • 100g icing sugar, sieved
    • 2 egg yolks
    • 1 orange, grated zest
    • 150g amaretti biscuits
    • 100ml brandy

    Method

    1. Over a medium heat, melt the chocolate and butter in a saucepan with the milk and cream, stirring until the butter and chocolate have melted and the mixture is smooth. Leave to cool for about 10 minutes. Beat in the icing sugar, egg yolks and orange zest.
    2. Break the amaretti biscuits up and divide half of them between 6 pretty dessert glasses. Sprinkle over half the brandy and pour in enough chocolate mixture to cover them. Repeat the layers with biscuits, chocolate mixture and brandy. Transfer the desserts to the fridge and leave for 12 hours to set.

    Drinks recommendation

You’ll be wanting some coffee to accompany these, of course, but don’t let the chance to match them with a fine cognac slip by.
