Prawn & apple couscous


100g Love Life Giant Wholegrain Couscous
150g pack essential Waitrose Cooked King Prawns
1 ripe avocado, diced
1 Royal Gala apple, cored and diced
120g pack prepared mango, diced
2 tbsp essential Waitrose Low Fat Vinaigrette Dressing
1 tbsp chopped mint


1. Cook the couscous in boiling water for 8 minutes until tender, drain and cool.

2. Stir in all the remaining ingredients and serve on 2 plates or in a large bowl.
