    Prawn, coconut & rice soup

    500ml organic vegetable stock
    400ml can Cooks’ Ingredients Organic Coconut Milk
    2 tsp Thai red curry paste
    75g Waitrose Duchy Organic Long Grain Rice
    125g pack Waitrose Duchy Organic Baby Corn, halved lengthways
    150g pack Waitrose Duchy Organic Raw King Prawns
    100g Waitrose Duchy Organic Spinach


    1. Bring the stock, coconut milk and curry paste to the boil in a large saucepan. Add the rice, and cover and cook for 5 minutes. Add the baby corn, and cook for a further 5 minutes.

    2. Stir in the prawns and spinach, and cook for 1-2 minutes until the prawns have turned pink and are cooked through.
