Prawn, leek and sweetcorn chowder

2 tsp oil
150g essential Waitrose New Potatoes, cut into 2cm dice
1 essential Waitrose Leek, sliced
400ml hot Cooks’ Ingredients vegetable stock
195g can essential Waitrose Sweetcorn, drained
½ x 235g pack frozen essential Waitrose Raw King Prawns
200ml essential Waitrose Semi Skimmed Milk
1. Heat the oil in a medium saucepan and fry the potatoes and leek for 5 minutes. Add the stock and sweetcorn, bring to the boil, cover and simmer for 5 minutes.
2. Add the prawns and milk and cook for a further 5 minutes until the potatoes are tender and the prawns fully cooked.
Typical values per serving:
5.2g fibre 19.5g protein
