Quick seafood pie

1 tbsp oil
1 essential Waitrose Leek, sliced
350g tub essential Waitrose Cheese Sauce
200g essential Waitrose Cooked Seafood Selection
400g tub essential Waitrose Mashed Potato
50g essential Waitrose Lighter Mature Grated Cheese
1. Heat the oil in a frying pan and fry the leeks for 3-4 minutes. Add the cheese sauce and bring to the boil. Stir in the seafood and cook for 1 minute. Transfer to a heatproof serving dish.
2. Meanwhile, microwave the mashed potato according to the pack instructions and spoon on top. Sprinkle with cheese and place under a preheated grill for 1-2 minutes until golden.
