Radish & tofu salad with sesame dressing

140g pack Waitrose & Partners Butterhead and Spinach Salad
150g pack mixed radishes, sliced
1 medium cucumber, sliced
2 avocados, sliced
225g smoked tofu (or any tofu of your choice), cubed
1 tbsp white sesame seeds
1 salad onion, finely chopped
2 tbsp sunflower oil
2 tbsp reduced salt soy sauce
1 tbsp maple syrup
2 tbsp Japanese rice vinegar
1 Start by making the dressing. Put the sesame seeds in a small frying pan and cook over a medium-high heat. Stir regularly until golden and fragrant (about 3-5 minutes). Set aside to cool while you prepare the salad ingredients.
2 Put the cooled sesame seeds and remaining dressing ingredients in a high-speed blender and whizz until smooth (or you can leave the dressing unblended – it’s just as good).
3 Arrange the salad leaves, radishes, cucumber, avocados and tofu on plates or a large platter. Spoon over the sesame dressing and serve immediately.
This is a fresh, light and colourful vegan salad, though you could easily replace the tofu with grilled chicken, steak or cooked king prawns, if liked.
