Raspberry fizz

Serves: 7


1–2 tsp caster sugar
4 fresh mint leaves, plus extra for garnish
Handful of fresh raspberries, plus extra to serve
Squeeze of fresh lemon juice
Ice cubes, crushed
200ml Fever-Tree Premium Indian Tonic Water 


1. Place the sugar, mint and raspberries in a wide glass (stemless wine glasses work well), and lightly crush with a fork. Stir in the lemon juice and crushed ice.

2. Top up the glass with tonic water, scatter in a couple of whole raspberries and mint leaves, and stir well to blend the flavours.
