Raspberry & ginger apple cider vinegar drink

Serves: 4
100ml Aspall Raw Apple Cyder Vinegar with Honey
40g clear honey
6cm piece root ginger, sliced
250g fresh raspberries
Ice cubes
Sparkling water, chilled, to serve
1. Place the apple cider vinegar, honey and ginger in a saucepan and bring to a gentle simmer. Set aside a few raspberries and place the remainder in the pan. Cook for 2-3 minutes, until the raspberries have softened, then remove from the heat and set aside to cool.
2. Chill overnight then pass the mixture through a fine sieve. Divide between 4 ice-filled tumblers and add a raspberry or two to each. Top up with sparkling water to serve.
