Rataouille filled peppers

100g essential Waitrose Couscous
4 essential Waitrose Peppers (mixed colours)
390g can essential Waitrose Ratatouille Provencale
50g essential Waitrose Mild Cheddar, grated
1. Preheat the oven to 200°C, gas mark 6. Place the couscous in a bowl and pour over 150ml boiling water, cover with clingflim and set aside for 5 minutes, then fluff up with a fork.
2. Meanwhile, cut the peppers in half and discard the seeds. Place in a small roasting tin.
3. Mix the ratatouille into the couscous and spoon into the peppers. Sprinkle over the cheese and bake for 30 minutes until golden and tender.
