Redcurrant fool

150g essential Waitrose redcurrants
1 tbsp essential Waitrose honey
1 tsp vanilla extract
450g essential Waitrose low fat natural yogurt
50g pistachio nuts


1. Stem the redcurrants and place in a small saucepan with the honey. Heat gently until the juices start to run and the fruit softens.

2. Using a wooden spoon, push the fruit through a sieve into a bowl and allow to cool completely.

3. In a large bowl, mix the vanilla extract into the yogurt and stir through the fruit. Divide between 4 smallbowls or glasses and chill for 10 minutes or more. Roughly chop the pistachios and sprinkle over the top of the redcurrant fools before serving.
