    Rhubarb Juice

    Rhubarb Juice


    • 1kg rhubarb, cut into small pieces
    • 250g granulated sugar
    • 225ml clear apple juice


    1. Place the ingredients in a pan. Bring to the boil, then simmer for 15 minutes.
    2. When the rhubarb has softened, strain the mixture through a muslin strainer and gently mash with a fork to squeeze all the juice out of the fruit. Transfer to sterilised jars and refrigerate.
