Roast Beef with Fennel


  • Silverside Beef (or prefered joint, large enough for the number of people to serve!)
    Knob of Butter
    Mixed Pepper Corns
    Fennel Seed


  1. Crush the Spices in a pestle and mortar, and sprinkle over a board. Strip the needles from the rosemary and mix into the crushed spices.
  2. Roll the beef in the spices and herbs kneading the seasoning well in.
  3. Transfer to the roasting dish, and add a couple of knobs of butter and extra (whole) fennel seeds. Cook on a medium heat til done.
  • Total time: 2hrs depending on size of Joint
