Roasted cherry & mascarpone tart

250g cherries, halved and stoned
½ tsp almond extract
2 tbsp demerara sugar
250g tub mascarpone
250g low fat Greek-style natural yogurt
1 tbsp maple syrup (or icing sugar)
1 tsp vanilla bean paste

1. Preheat the oven to 180°C, gas mark 4. Toss the cherries, almond extract and demerara sugar together in a small roasting tin. Roast for 10 minutes, stirring gently halfway through. Set aside to cool for a couple of minutes.
2. Using a balloon whisk, beat together the mascarpone, yogurt, maple syrup (or icing sugar) and vanilla in a mixing bowl. Pile into the sweet pastry case and top with the slightly cooled cherries and any roasting juices. Serve immediately.
Cook’s tip
For a more adult dessert, toss the cherries with 1 tbsp almond or cherry liqueur instead of the almond extract before roasting.
