    Roasted Gammon with Cider and Apples

    Christmas wouldn't be complete without a gammon. For this time of year we have special Christmas holiday gammons which are family-sized for this festive occasion. In this recipe, gammon, apples and cider form a perfect combination for a simple dish. Serve with steamed green beans.

    • Cooking time: 120 minutes to 150 minutes

    Serves: 8 - 10

    Ingredients

    • 3.6kg Waitrose Unsmoked Whole Holiday Gammon
    • 5 dessert apples, halved
    • 1 garlic bulb, cut in half
    • 2 medium onions, peeled and cut into eight wedges
    • 450ml Waitrose Vintage English Cider
    • 450ml chicken stock
    • 1 tbsp Dijon mustard
    • Salt and freshly ground black pepper
    • Bunch fresh flat leaf parsley, chopped

    Method

    1. Preheat the oven to 180°C, gas mark 4. Wash the gammon and pat dry with kitchen paper. Place in a roasting tin and arrange the apples, garlic and onion around it. Mix the cider, stock and mustard together and season. Pour over the gammon.
    2. Cook for 2-21/2 hours or until thoroughly cooked, then remove the gammon and leave to rest on a board for 10 minutes. Slice and serve with the apples, pour over the pan juices and garnish with the parsley.

    Cook's tips

    Waitrose gammons don't require any soaking before hand. Just give the gammon a good rinse and pat dry with kitchen paper before cooking.
