    Rocket pesto with peas and tomatoes

    • 375g essential Waitrose spaghetti
    • 250g essential Waitrose frozen garden peas
    • 100g wild rocket
    • 3 tbsp grated essential Waitrose parmigiano reggiano
    • 4 tbsp olive oil
    • ½ lemon, grated zest and juice
    • 12 sundried tomatoes, chopped


    1. Cook the spaghetti in a pan of boiling water, according to packet instructions, adding the peas to the pan 3 minutes before the end.
    2. Meanwhile, blitz together the rocket, parmigiano reggiano, olive oil and lemon zest and juice in a food processor, until finely chopped and combined.
    3. Drain the pasta, then stir through the pesto mixture and tomatoes. Serve with extra grated parmigiano reggiano if liked.
