Rocket pesto with peas and tomatoes

Ingredients

375g essential Waitrose spaghetti

250g essential Waitrose frozen garden peas

100g wild rocket
-
3 tbsp grated essential Waitrose parmigiano reggiano

4 tbsp olive oil
-
½ lemon, grated zest and juice

12 sundried tomatoes, chopped
Method

Cook the spaghetti in a pan of boiling water, according to packet instructions, adding the peas to the pan 3 minutes before the end.

Meanwhile, blitz together the rocket, parmigiano reggiano, olive oil and lemon zest and juice in a food processor, until finely chopped and combined.

Drain the pasta, then stir through the pesto mixture and tomatoes. Serve with extra grated parmigiano reggiano if liked.
