Rose harissa turkey sloppy Joes

Serves: 4
1 tbsp olive oil
1/2 red onion, finely chopped
1/2 green pepper, deseeded and finely chopped
300g pack Essential British Turkey Breast Mince
2 tbsp Cooks’ Ingredients Rose Harissa Paste
2 tbsp Waitrose Duchy Organic Tomato Purée
1 tbsp dark brown soft sugar
4 FreeFrom Gluten Free Seeded Rolls, split and toasted
90g pack wild rocket
1. Heat the oil in a large nonstick frying pan over a high heat. Add the onion and pepper and sauté for 2-3 minutes until soft. Add the turkey, breaking it down with a spatula or wooden spoon until thoroughly cooked, the juices run clear and there is no pink meat.
2. Reduce the heat to low. Stir in the harissa, tomato purée, brown sugar and 100ml water, then bring to a simmer for 3-5 minutes. Season, then remove from the heat.
3. Spoon the mixture into the toasted rolls, topping each with some rocket before serving, with any extra rocket on the side.
Cook’s tip Turkey breast mince is wonderfully lean and low in saturated fat. Turkey is rich in niacin and vitamin B6, which both contribute to normal psychological function and the reduction of tiredness and fatigue.
