    Green beans with shallots and crushed walnuts

    Green beans with shallots and crushed walnuts

    Ingredients

    400g extra fine green beans, trimmed
    2 tbsp extra virgin olive oil
    1 clove garlic, finely chopped
    50g walnuts, finely chopped
    1 tbsp lemon juice

    Method

    1 Fill a large saucepan with boiling water. Simmer the beans for 2 minutes. Drain and run under cold water, then put on kitchen paper to dry.

    2 Put the oil into the same pan and set over a mediumhigh heat. Add the garlic, season and fry for 2-3 minutes, until golden. Add the walnuts and fry for 5 minutes. When ready to serve, stir through the beans and lemon juice, then gently reheat until warmed through.
