Salmon, spicy grains & balsamic kale

280g pack 2 boneless Scottish salmon fillets Oil, for greasing
1 tsp Cooks’ Ingredients Piri Piri Rub
250g pouch quinoa, chickpeas, bulgur wheat & rice
250g pack kale
1 tbsp balsamic glaze 






1 Preheat the oven to 200°C, gas mark 6. Place the salmon on a lightly greased baking tray, sprinkle with the piri piri rub and top with 100g
of the grains, roast for 15-20 minutes or until just cooked through. 

2 Meanwhile, heat 50ml water in a large frying pan and add the kale, cover and steam for 5-6 minutes or until just tender. Drizzle over the balsamic glaze and add the remaining grains and cook for 1 minute. Serve with the salmon.
