    Salmon and feta frittata

    • Total time: Ready in 25 minutes 25 minutes

    Serves: 4


    150g essential Waitrose New Potatoes, diced 2 tbsp oil
    1 essential Waitrose Onion, sliced
    200g pack essential Waitrose Greek Feta, crumbled
    213g can essential Waitrose Wild Red Salmon, drained
    4 Waitrose Free Range Eggs
    1 tbsp chopped fresh mint (optional)
    Dash of milk


    1. Cook the potatoes in boiling water for 12–15 pour over the salmon. Cook gently for 5 minutes.

    2. Heat the oil in a 23cm frying pan and fry the onion for 3–4 minutes, add the potatoes, feta and salmon and cook for 1 minute.

    3. Whisk the eggs with the mint (if using), seasoning and a dash of milk and pour over the salmon. Cook gently for 5 minutes.

    4. Place under a preheated grill for 3–4 minutes until golden and set.
