Sausage, leek and apple pie

450g pack Waitrose Gourmet Pork Sausagemeat Stuffing
900g diced potatoes
75ml semi-skimmed milk
1 tbsp oil
2 sliced leeks
1 tbsp chopped sage
1 small sliced eating apple
salt & pepper to season


1. Boil the potatoes for 10 minutes until tender and mash with the milk and seasoning. Meanwhile, heat the oil in a large frying pan and fry the sausagemeat for 3 minutes.

2. Add the leeks and cook for 3-4 minutes, stir in the sage and apple then transfer to an ovenproof serving dish and top with the mash. Bake at 200˚C, gas mark 6, for 15-20 minutes.
