A simple stuffing can be made ahead of time and is a great way to add variety to Christmas lunch
Mix sausagemeat and breadcrumbs with whatever you fancy – grated apple, dried figs, slow-cooked onions, pine nuts, chestnuts, pistachios, a slug of brandy or sweet cherry, herbs such as parsley, dill or sage, or spices such as cinnamon and allspice.
Transfer to an oven dish and chill or freeze until the big day.
