    Simple vegetable fried rice

    • Preparation time: 10 minutes
    • Cooking time: 30 minutes
    • Total time: 40 minutes 40 minutes

    Serves: 8


    300g jasmine rice
    2 tbsp sesame oil
    4 salad onions, finely sliced
    190g pack fresh petits pois
    210g pack baby corn and sugar snaps, chopped
    2 tbsp soy sauce
    1 x ½ tsp ground white pepper
    28g pack fresh coriander, chopped
    25g pack fresh chives, chopped


    1. Cook the rice according to pack instructions, then drain through a sieve and rinse under cold water to cool.

    2. Heat the sesame oil in a wok until hot, add the salad onions, peas, baby corn and sugar snaps and cook for 2 minutes until tender. Stir in the rice, tossing to combine, then add the soy sauce, pepper and herbs. Serve immediately, seasoned with a little extra sesame oil and soy sauce, if you wish.
