Sirloin steaks with hot & smoky garlic butter

50g butter, melted
2 tbsp olive oil
4 cloves Cooks’ Ingredients Garlic, crushed
1 tsp chilli flakes
4 tsp sweet smoked paprika
Small bunch of fresh rosemary
Small bunch of fresh thyme
4 x 200g sirloin steaks, trimmed of fat
25g pack flat leaf parsley, chopped
Lemon wedges, to serve


1. Prepare and light the barbecue or preheat a grill or griddle. Mix together the melted butter, olive oil, crushed garlic and spices. Season.

2. Using the rosemary and thyme bunched together as a brush, coat the steaks with the flavoured butter and cook over a hot barbecue for 2-3 minutes each side for medium-rare, basting with more oil (using the herb brush) throughout. Sprinkle with plenty of chopped parsley and serve with lemon wedges.
