    Spiced mango & passion fruit crumble

    Serves: 6

    Ingredients

    450g frozen mango chunks, defrosted according to pack instructions (don’t drain any juice)
    2 large ripe passion fruit, pulp scooped out (sieved of the seeds if preferred)
    25g golden caster sugar

    For the topping
    150g plain flour
    100g unsalted butter, diced and chilled
    50g golden caster sugar
    1/2 tsp ground ginger
    5 green cardamom pods, seeds only, finely ground (optional)
    50g chopped Brazil nuts
    Vanilla or coconut ice cream, to serve

    Method

    1. Preheat the oven to 190°C, gas mark 5. Put the defrosted mango (with any juices) in a medium baking dish and stir in the passion fruit, sugar and 2-3 tbsp water.

    2. For the topping, put the flour and butter in a large bowl and rub together with a pinch of salt until it resembles breadcrumbs.

    3. Add the sugar, ginger and cardamom (if using), then scrunch the crumbs together with your hands a few times to make a slightly more cookie-dough-like texture here and there. Fold through the chopped Brazil nuts, then scatter the topping over the mango and passion fruit.

    4. Bake the crumble for 40-45 minutes, until the topping is crisp and golden and the fruit is bubbling up underneath. Serve hot, with ice cream.
