Spiced new potatoes

1kg Jersey Royals or Cornish New Potatoes, scrubbed and halved
Juice 1 lemon
1 large clove garlic, crushed
1 tsp turmeric
½ tsp hot chilli powder
1- 1½ tbsp Cooks' Ingredients Panch Phoran, toasted
½ tsp sea salt
2 tbsp groundnut oil


1. In a large pan, parboil the potatoes until just tender. Drain and set aside to cool.

2. In a large bowl, mix the lemon juice, garlic, turmeric, chilli, toasted spices and salt. Tip in the potatoes and toss to coat thoroughly. Leave to marinate for at least 30 minutes, preferably longer. Preheat the oven to 220°C, gas mark 7.

3. Heat the groundnut oil in a large roasting tin, add the marinated potatoes and roast for 30 minutes, until crispy and brown. Serve with a cooling raita.

  • Cooking time: 40 minutes
  • Total time: 50 minutes, plus 30 minutes marinating 50 minutes

Serves: 4 as a side dish
