Spiced turkish mixed nuts and fruit recipe | Waitrose

Totally irresistible – you will find that one nibble of this delicious mix is never enough
Makes: about 900g
1 tbsp olive oil
4 tbsp tahini
4 tbsp pomegranate molasses
3 tbsp zaatar
2 tsp fresh thyme leaves
1 tsp flaked sea salt
400g cashew nuts
200g blanched almonds
150g pecans
60g sour cherries or dried cranberries
100g dried apricots, cut into 1cm pieces
1. Preheat the oven to 200˚C, gas mark 6; line a large baking tray with baking parchment. In a large bowl, mix together the oil, tahini, pomegranate molasses, zaatar, thyme and salt until combined. Add the nuts and toss to coat.
2. Spoon onto a large baking tray in a single layer (you may need 2 trays). Bake for 10-12 minutes, stirring halfway through, until lightly golden. Remove from the oven, stir through the cherries and apricots, then leave to cool completely. Fill either cellophane bags or small jars with the fruit and nut mix, seal tightly and label. Store in a cool, dark place for up to 1 month.
