Spiced morrocan mackerel

  • 2 Mackerel, headless, cleaned
    1 rounded tbsp ground cumin
    salt and freshly ground black pepper
    olive oil
    lemon juice
    2 cloves garlic (crushed
    half tsp cayenne pepper


  1. Lay fish flat on a grill pan. Make 6 diagonal slashes on both sides of each. Mix the cumin with salt and pepper and rub this into the fish ensuring some goes into the slashes. Stir together oil, lemon juice, garlic and cayenne, spoon a little over the fish. Place under a grill, not too close to heat and cook for 2 minutes. Baste with oil then continue to cook 4-5 mins basting with juices from pan. Turn fish, baste oher sid.Grill basting until fish is cooked through and skin crisp and charred.
