Spiced Pork Meatballs in Tomato and Coriander Sauce

Meatballs in a spicy tomato sauce make a delicious family lunch or supper dish - you can adjust the amount of spice to suit your family's taste. Serve the meatballs with creamy mashed potato or pasta, and a watercress salad.

  • The meatballs:
  • 500g Waitrose Farmhouse or Waitrose British Ground Pork
  • ½ medium onion, peeled and finely chopped
  • 55g fresh white breadcrumbs
  • ½ tsp ground cumin
  • Pepper
  • 25g plain flour
  • 1 tbsp olive or sunflower oil
  • ½ tsp ground coriander
  • Salt
  • 1tbsp fresh coriander, chopped
  • The sauce:
  • Pepper
  • 2tbsp olive oil
  • 1 small onion, peeled and chopped
  • 1 x 400g can Waitrose Italian Tomatoes, roughly chopped
  • ½ tsp ground coriander
  • ½ tsp ground paprika
  • Salt
  • 1 tbsp fresh coriander

  1. To make the meatballs, place all the ingredients, except the flour and oil, into a bowl and thoroughly mix. Sprinkle a little flour onto the work surface, make 16 balls with the meat mixture and roll them in flour.
  2. Heat the oil and gently fry the meatballs for about 6-8 minutes or until brown. Transfer to a warm plate.
  3. To make the sauce, place the olive oil and onion in a pan and cook until the onion is soft. Add the tomatoes with their juices and the remaining ingredients and simmer for 3-4 minutes.
  4. Place the meatballs in the sauce and continue simmering for a further 4-5 minutes or until thoroughly cooked and there is no pink meat. If the sauce is too thick, add a little water.
  5. Serve immediately.
