    Spicy Lamb Burgers with plum, mango and lime salsa

    Spicy Lamb Burgers with plum, mango and lime salsa

    Delicious for a special occasion barbecue, these spicy lamb burgers also make a perfect, quick, mid-week supper dish.

    • Total time: 22 minutes to 26 minutes 30 minutes

    Serves: 4

    Ingredients

    • The burgers
    • 500g pack Waitrose Welsh Ground Lamb
    • 1 tbsp red Thai curry paste
    • 1 small red onion, finely chopped
    • Handful of fresh coriander, finely chopped
    • Finely grated rind and juice of 1 lime
    • Salt and freshly ground pepper
    • The salsa
    • Juice of 1 lime
    • 4 plums, stoned and finely diced
    • ½ medium mango, peeled, stoned and finely diced
    • Half a pack of fresh mint leaves, finely chopped

    Method

    1. Preheat the grill or barbecue. Put the lamb, curry paste, onion, coriander, grated rind and lime juice into a large bowl. Season and mix well
    2. Divide the mixture into 4 and shape into burgers. Flatten to about 1.5cm. Cover and chill until ready to cook.
    3. To make the salsa, combine all the ingredients in a small bowl. Season and set aside.
    4. Cook the burgers on the barbecue, or under a medium-hot grill for 6-8 minutes on each side or until thoroughly cooked, there is no pink meat and the juices run clear.
    5. Serve the burgers on warmed Waitrose Garlic Bread with the salsa spooned over the top and with a little natural yogurt on the side.

    Variation

    Combine the ground lamb with some finely chopped onion, garlic and mixed herbs. Season and shape into balls and shallow fry until browned and thoroughly cooked, the juices run clear and there is no pink meat. Serve with hot, buttered noodles or spaghetti.

    Serving tips

    Substitute the red curry paste with a green curry paste for a change of flavour.
