Spicy pork with Fairtrade pineapple


1 small Waitrose Fairtrade Supersweet Pineapple
4 tbsp dark muscovado sugar
1 tsp frozen Cooks’ Ingredients Chopped Jalapeno Red Chilli
1 tsp Bart Fairtrade Mixed Spice
1 tsp Bart Fairtrade Ground Ginger
4 essential Waitrose British Pork Loin Steaks


1. Preheat the grill. Peel the pineapple and cut into 8 slices about 1.5cm thick. Mix the muscovado sugar, chilli, mixed spice, ginger and seasoning in a bowl. Sprinkle the sugar and spice mix over both sides of the pork and pineapple.

2. Place the chops and pineapple slices on a grillpan lined with foil and turn up the edges to catch any cooking juices. Grill for 18–22 minutes, turning once until golden and the pork is cooked through. Remove the pineapple and keep warm if it cooks too fast. Serve with steamed rice, sugar snap peas and any juices spooned over.

Cook’s tip

Gammon steaks work just as well as pork in this recipe – just don’t forget to adjust your cooking times.
