    Steak with Stilton and watercress sauce

    • 2 shallots, chopped
    • 4 tbsp Henriques & Henriques Full Rich Madeira
    • 4 tbsp half fat crème fraîche
    • 50 g Duchy Originals From Waitrose Organic Cropwell Bishop Blue Stilton, crumbled
    • 1 pack John Hurd's Organic Watercress, washed
    • 2 Duchy Originals From Waitrose Organic British Beef Sirloin Steaks


    1. Preheat the grill. Place the chopped shallot and Madeira together in a small pan and simmer until reduced by half. Add the crème fraîche and simmer again. Stir the crumbled Stilton into the sauce and heat gently until melted. Finely chop half the watercress leaves, stir in and check the seasoning.
    2. Season the steaks on both sides. Grill on either side for 4-6 minutes for rare, 8-10 minutes for medium and 10-12 minutes for well done. Transfer onto a warm serving plate and leave to rest. Serve the steaks with the sauce and the remaining watercress.

    Stilton is a relatively difficult ingredient to match, but this wine handles it with ease. Elegant and rich to suit both the tender steak and the flavourful sauce: Bonterra Organic Zinfandel, Medocino, California.
