Steamed mussels with lemongrass and chilli

Vegetable oil spray
110g baby leeks, sliced
2 x 450g Waitrose Scottish mussels in a fragrant Thai broth
3 tbsp chopped coriander
270g ciabatta loaf, sliced and griddled, to serve
235g pack Waitrose pak choi, steamed, to serve


1. Heat a large saucepan until hot, add a little oil and sauté the baby leeks until softened.

2. Add the mussels, cover with a lid and cook for 4-5 minutes or until all the mussels have opened. Discard any that remain closed.

3. Scatter with chopped coriander and serve with the ciabatta and steamed pak choi.
