Ingredients
-
450g potatoes, such as Maris Piper, peeled and diced
-
25 g unsalted butter
-
1 leek, trimmed, washed and sliced
-
200 g Waitrose unsmoked gammon steaks
-
100 g Waitrose spicy peach chutney
Method
-
Cook the potatoes in boiling water for about 15 minutes, until tender. Meanwhile, melt the butter in a wide, non-stick frying pan. Add the leek and gently cook for 3-4 minutes, until soft. Drain the potatoes, mash and stir in the leek. Season.
-
Cut the gammon in half and snip the rind with scissors. Return the frying pan to the heat and cook the gammon for 1-2 minutes each side, until browned. Add the chutney with a dash of water to the pan. Cook for a further 2 minutes, turning the gammon to coat in the sticky sauce. Serve with the mash and a few steamed Waitrose Frozen Fine Beans.
