Stir-fried pork with Asian greens

160g Waitrose LOVE Life brown basmati rice
2 tsp soy sauce
2 tsp fish sauce
1 lime, juice
1 red chilli, deseeded and finely chopped
1½ tsp light brown soft sugar
300g pork loin steaks, trimmed of fat
235g pack green pak choi, cut into wedges
225g mange tout, halved on the diagonal
175g baby corn, halved
4 salad onions, chopped
2 tsp groundnut oil


1. Cook the rice according to pack instructions. Meanwhile, combine the soy sauce, fish sauce, lime juice, chilli and sugar. Cut the pork into strips and marinate in half the soy mixture.

2. Put the pak choi, mange tout, corn and salad onions in a large, shallow pan with a tightly fitting lid. Add 4 tbsp boiling water, cover and steam for 4 minutes.

3. Heat the oil in a wok or large frying pan over a high heat and stir-fry the pork for 4 minutes, until cooked through. Serve drizzled with the remaining dressing together with the steamed vegetables and rice.
