Strawberries in sweet lemon, cardamom and black peppercorn syrup

2 x 225g packs essential Waitrose Strawberries (small if possible), washed
1 unwaxed lemon
12 cardamom pods
¼ tsp whole black peppercorns
225g caster sugar
¼ tsp Taylor & Colledge Vanilla Bean Paste


1. Place the strawberries into a large bowl or on a large, deep platter. Remove the zest from the lemon with a vegetable peeler. Lightly crush the cardamom and black peppercorns in a pestle and mortar.

2. Warm 200ml water in a small pan with the sugar, vanilla paste, zest, cardamom and pepper. Bring to the boil and simmer for 2 minutes.

3. Pour over the strawberries and leave to stand for at least 15 minutes before serving with lightly whipped cream or vanilla ice cream.
