Strawberry and lychee punch

This refreshing punch looks and tastes delicious.  For a alcohol-free mock-tail simply add cloudy lemonade to the chilled strawberry puree in an ice filled glass.

  • Preparation time: 10 minutes, plus chilling

Serves: 8


500g strawberries, hulled
100ml Monin Gomme, or sugar syrup
Juice 1/2 lemon
200ml Gabriel Boudier Liqueur de Lychees
100ml Absolut Raspberri Vodka
Sparkling water
8 sprigs mint, to serve


1. Place the strawberries into a food processor with the sugar syrup and lemon juice.  Blitz until smooth, then pour into a jug and chill.

2. Pour the lychee liqueur and vodka into a large serving jug and add the strawberry pulp.  Stir and pour between 8 ice-filled glasses.  Top up with sparkling water, slice the remaining strawberries and garnish on top along with some sprigs of mint.
