Summer peach salad


3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Juice of half a lemon
1 head of chicory, leaves separated
200g mixed leaves 
95g pack Serrano ham (7 slices)
150g goats cheese, crumbled  
2 Perfectly Ripe Regal’n peaches 


1. Whisk together the oil, vinegar and lemon juice and season to taste. Dress the chicory and salad leaves with the dressing, place on a serving platter or bowl then arrange the ham and cheese over the top.

2. Stone the peaches and cut into thin wedges. Arrange over the top of the salad and serve.

Cook's tip

You can use either yellow or white flesh peaches, or one of each. Nectarines work just as well in this salad.
