Sweet & sour passion fruit dhal

Serves: 2
200g dried red lentils
¾ tsp salt
¾ tsp ground turmeric
2 passion fruit
1 tsp light brown soft sugar
Steamed long grain rice, to serve (optional)
TARKA
2 tbsp ghee
25g pack fresh coriander
1 tsp cumin seeds
1 Put the lentils, salt, turmeric and 800ml water in a medium pan and bring to the boil. Cook over a low heat for 15 minutes, until the lentils are soft and mushy. Mix in the pulp of the passion fruit and the sugar.
2 For the tarka, heat the ghee in a small pan while you finely chop the coriander. Add the cumin seeds and when they start to sizzle, stir in the coriander. Pour the tarka over the cooked dhal and serve straight away with some steamed rice, if liked.
