Tarragon and cucumber lemonade

Preparation time: 10 minutes
Makes: 1.5 litres
1 cucumber, washed
1⁄2 x 20g pack tarragon, washed
6 lemons, juice
125g caster sugar
1 litre sparkling water
1 Roughly chop the cucumber and put in a blender. Tear in the tarragon leaves and add the lemon juice. Add the sugar and 250ml still water, then whizz until smooth. Pour the mixture through a fine sieve into a serving jug, discarding the pulp. Add a few handfuls of ice, top with sparkling water, stir and serve straight away.
