The Fabulous Baker Brothers' Wheaten bread

450g strong wholemeal flour, plus extra for dusting
1 tsp sea salt
2 tsp caster sugar
1 tsp bicarbonate of soda
50g oats, plus extra for the tin
20g butter, plus extra for the tin
100ml black treacle
200ml full-fat milk
200ml buttermilk


1. Heat the oven to 170°C/Gas 3. If you have one, place a baking stone in the oven to heat for 10 minutes.

2. Put the flour, salt, sugar, bicarbonate of soda and oats in a bowl, and mix to combine.

3. Gently heat the butter and treacle in a pan until melted. Add the mixture to the dry ingredients, along with the milk and buttermilk.

4. Mix well until you reach a soft, wet dough. This may seem too wet but don’t worry, it’s just right, and it makes fantastic bread.

5. Grease a large (2lb) non-stick loaf tin with butter and dust with a sprinkling of oats. Place the wet dough in the loaf tin. If you want a loaf that doesn’t rise too much in the centre – such as if you want a regular square for making sandwiches – then gently indent the centre of the dough with wet knuckles, so it’s lower than the edges. It will rise up to meet the edges as it bakes.

6. Sprinkle the top with a light scattering of oats and cover with foil. Bake in the oven, on the hot baking stone, for 35 minutes, then remove the foil and bake it for a further 10 minutes to get some colour on top. Remove from the oven and let it cool on a wire rack.
