    Thomasina Miers' Virgin Mary

    • Preparation time: 5 minutes
    • Total time: 5 minutes 5 minutes

    Makes: A large jug (approx. 1.5 litre)


    1.5 litres tomato juice, chilled
    Juice of 1 lemon
    1tbsp Worcestershire sauce
    1tsp everyday hot sauce, Wahaca Fiery Arbol Chilli Sauce, or Tabasco
    Several good grindings of pepper
    ½ tsp celery salt
    1 tsp flaky sea salt
    100ml beef consommé
    Celery sticks, to garnish


    1. Combine all of the ingredients in a jug and stir well. Taste and adjust the balance of spicy, savoury and sour with Tabasco, salt and lemon, as you like.

    2. Serve in highballs filled to the brim with ice, and add a celery stick and a good grinding of black pepper to garnish. To make it a Bloody Mary, also add 50ml sherry and 100ml red wine.
